I make a similar salmon dish: In my mortar and pestle I crush almonds, chiles, salt, pepper, garlic, and sometimes whatever herbs I have lying around (thyme or rosemary are good). I squeeze a little lemon on the salmon before putting the nut mix on the fish. It's delicious. Now I'll have to pair it with some ramps... Do not use the fondue mix from Trader Joe's--it's terrible compared to the real thing! I agree that Beaufort would be a great substitute for Emmantaller. Also, Vacherin Fribourgeois is a great kick in any fondue; it's a raw cow's milk cheese from Switzerland, with a stronger flavor than any of the others mentioned. I agree, it's too hard to pick just one of those options. I have a few streamlined mid-century modern pieces, a big comfy sofa, some scavenged vintage stuff (a 50s formica kitchen table, for example), and some nonedescript Ikea stuff. I tend to go to nearly all of the above answer choices for my flowers--to Trader Joe's for something quick and affordable, to my local florist (I love what they do at Gilly's in Silverlake) if I want a spectacular arrangement, and if I'm at the farmer's market, I'll pick something up if it catches my eye (and if I've brought enough cash...).
