I grew up near an ethanol plant, and basically the whole town smelled. On a bad day there was a strong rotten egg odor. That experience would definitely make me weary to use ethanol anywhere near food, but hopefully the smell isn't an issue with this product.

Kneading vital wheat gluten into the mix helps really hold the patties together, and adding tons of spices gives them a lot of flavor, whereas I find that most recipes, even with tons of veggies in them, are lacking flavor. These are so good with avocado and Vegenaise.

No matter how well I plan my week, there are always days I don't get around to making what I wanted to. It usually starts with my husband saying, "Oh, I forgot tonight I have to . . ." or "Doesn't pizza sound good?"

It's a good leavener for vegan baked goods when combined with baking soda. I especially like it in corn bread.

I was under the impression that Natalie Portman has been vegan for more than a few weeks/months and therefore would have been vegan at the time of filming (despite the implication that butter was used in the challenge). But I think that Top Chef is afraid of the word vegan unless it's being used disparagingly. When Zooey Deschanel was on Masters, she never, ever said vegan; it was only the chefs afterward who said the word.

And, yes, mushrooms have a meaty texture, but they are not a protein. A tablespoon of lentils and four chickpeas seemed to be the only proteins used in any of the dishes. No wonder some of the chefs were complaining that their dishes wouldn't be satisfying!

This has nothing to do with cooking, but slowly swallowing a spoonful of peanut butter is the only way I can get rid of hiccups. And it makes me feel like I'm in a Shel Silverstein story.

I have cork. It dents easily (especially when the handle to your pasta maker comes loose and falls on it) but is so warm to walk on and incredibly comfortable. With my old tile floor my feet would hurt just from making dinner, even with slippers on. I can stand on the cork barefoot for hours and not be in pain. It does need frequent sweeping and mopping though, but that might just be because I chose a really dark color.

I advise against using strawberries in the cake. I recently made an ice cream cake and mixed strawberries into the ice cream, but even after taking the cake out of the freezer to soften for a while the strawberries remained rock hard. Maybe a puree would work better, or just have a strawberry sauce to pour over the cake. But the icy chunks of strawberry in the cake were not very pleasant.
