I just made these crumb cakes and I'm eating a cakelet right now, warm from the oven!
The cake is delicate and the crumb topping is yummy.
I made 18 cakelets in regular-sized paper-lined muffin tins. The only problem I had was that there was way too much crumb topping for 18 regular-sized cakelets.
Rather than discard the extra topping I added an egg, a little more sugar, and some milk and baked in an 8x8-inch pan as a cake. Turned out great.
