I live in a 375 sq ft apt and use World's Best, too. The litter box has to be in my bedroom, and this one is totally fine. There is some tracking but we don't really have a great mat for in front of the box -- if you get one of those that simulates grass I imagine it should really trap the dust and stray litter.

Also, a note on Feline Pine: my cat has a severe allergy to pine that we discovered through using the litter. Feline Pine was the first litter we got after we adopted our cat and she was so allergic that her eyes swelled up and she refused to go in the litter box. We've used Swheat Scoop which is really great, but switched to World's Best because it clumps a bit better and it a comparable price on Wag.com (where we buy all our cat stuff).

Having family from the South, key lime pie is my favorite and I've made it at least a dozen times vegan. I always add agar agar, about 1 1/2 tsp, even when the recipe doesn't call for it. I've used the key lime pie recipe from Vegan Pie in the Sky and added it. The arrowroot is just like cornstarch (except not a corn product :) ) so that's fine to get the balance that MiscMarsha mentions. I add more lime juice too (always squeeze mine fresh, not bottled juice) than the recipe calls for as, yes, it's not tart enough. I also add a lemon. If you use key limes, the flavor will be perfect, but a tip for using regular limes is to add in some lemon juice to better approximate the key lime flavor. Personally I never really worry about using the "right" tofu, at least in recipes I've made several times, since there always comes a time when I don't have the right kind and have to make adjustments anyway. Silken tofu is silken tofu, and that little bit of agar agar helps out if needed.

Me too! Although no utilities are included and the apt is about 400 sq ft, I pay about 17% of my net income on rent. Luckily in NYC it was easy to find a roommate who was so busy that she's never really home, which eases the burden of the cramped living space. I realize I'm very lucky but in the NYC area you can save a lot of money just by sharing a room with someone. A 2-bedroom in my area in Brooklyn goes for about $1800 (or a little less, usually with garden space) and having a roommate and then a significant other really brings the price down. I just can't see having my own place in the city at any point in the near future... which is why I'm moving out of NYC.

Just throwing in my two cents here... I think painting, removing blinds, and changing hardware will go a long ways. I love the cabinets, and if you can sacrifice the space, I think taking down the old cabinets on the sink side would do a lot to brighten up the space. Add a couple of floating shelves for some items. I don't know if you'll be able to do this and keep the cabinets in tact, but it's worth thinking about at least.

I went to the tea festival that Serious Eats article mentioned just yesterday, and it was fantastic. The ladies from Fang Gourmet Tea are so sweet and really explained how it evolved. We got a dish with peanuts, walnuts, cashews, sesame seeds, oolong tea, and pumpkin seeds (pepitas) and ground it with an agave stick (which is supposed to also impart some flavor) for at least 20 minutes, until it became very oily and pasty. A food processor definitely wouldn't do justice to the process. Then water was added and it was all stirred together and it was poured into cups to drink. Very earthy and creamy and delicious, especially since it was so cold in NYC yesterday!! If you're in the area at all, you should DEFINITELY try it, it's $10/person.

Since I'm a young person -- in my 20s and living in NYC -- I like having a mix of old and new traditions, as well as others that reflect where I currently live. I really enjoy the tradition of travelling home for Christmas, and spend one week (through Christmas Day) with my family and then fly to visit my partner and his family for one week. I really like having the extra-long vacation and spending it with family. I also like going to see the tree at Rockefeller Center and going up to Bryant Park and walking down Fifth Avenue to see the holiday decorations and the store displays at Macy's, Saks, etc.

Since my partner and I have only spent two Christmas seasons together (this year will be our third) we're still making our own, new traditions, like making sure to bake cookies, make some presents to send out to our extended family, and making our own Christmas cards the weekend after Thanksgiving to usher in the winter holidays. Living in a tiny apartment with a cat allergic to pine, we haven't been able to get a real tree, but make do with a large Christmas cactus and red fabric draped as a "skirt" and our presents to each other (and our cat :) ) stacked around the tree as they are bought and wrapped.

A few tips I've known come in handy:
1) Use a recipe with apple cider vinegar, it further tenderizes the pie crust and ensures flakiness
2) Keep your fats cold!!
3) To avoid the issue of rolling out dough, you can lay a piece of clingfilm on a surface, put the disc of dough on it, then cover with another piece of clingfilm and roll that way, then peel it off onto your pie plate. Saves a lot of hassle, especially if you're baking/cooking a lot of other things (like for Thanksgiving!) and don't want to wash all the dishes.

I've already spent months planning which gifts I'm going to make (soy candles & lots of cozy crocheted items) and just put together a vegan Thanksgiving menu for myself and my partner. I second a few other people's comments: I do have many of what this post and some commenters list as their own "grown-up" items but I really just don't feel like a grown-up. I don't think I ever will, even though I have a very nicely-stocked kitchen, an air mattress without holes in it for guests, spare sheets, even a budding collection of tools. Sometimes I feel like an adult when I can actually afford a full-priced item like a duvet cover (even if it's from Ikea) or just a new pair of winter boots without having to scrounge sales.

However, I just think I'm getting older and wiser without feeling like a "grown-up." I have a happy cat and a happy partner and a pretty clean, sometimes tidy apartment in NYC and I pay my rent on time, but... nope. Probably never going to be a grown-up.

I work full-time and try to leave every day at 5pm sharp so I can get home by 5:30pm (if I don't have to stop for groceries on the way home). My and my partner's appetites wane in the afternoon, so we don't mind having a later dinner around 7pm or so. That gives me a bit of time to relax before starting dinner. We also alternate making dinner plans every other week so planning the recipes and meals makes it pretty clear how long something's going to take, and then we decide upfront at the beginning of the week if it's worth spending extra time, or we try and find recipes that don't take more than one hour total. Also, since my partner works from home, he can start on parts of the meal if I don't want to make everything from scratch, and I can help when I get home if he's making dinner. :)

I follow a vegan diet (for ethical reasons) which seems to work for me. I lost 15 lbs when I went vegan from being vegetarian, and have managed to easily keep it off when I feel like it by eating whole grains and a lot of veggies. I'm most concerned about heart health and cholesterol levels since heart disease runs in my family and this diet helps a bit.

So, basically what everyone else said: whole foods, plus zero cholesterol.
