This is called Khichdi or Khichudi in India. We generally have it when its very cold or raining. We add some deep fried potatoes, eggplant dipped in chickpea flour batter, fish. We also eat this as left over with some scrambled eggs.
Sometimes we make it without vegetables but most of the time we add vegetables we have in home(like cabbage, green beans, carrots, green pepper, cauliflower etc). We add a topping of whole cumin, cashew and/or raisins fried in hot oil/clarified butter. This is soul food of many indians.
Many people like it with yoghurt as well.
