One thing to remember is if you have dogs, never leave the dog alone with the chickens until you are certain the dog will not harm them. This may take months of working with the dog, slowly introducing them. Remember a dog's instinct is to kill chickens. That's the way my grandmother lived for many years. As you say, electricity and air conditioning are choices that aren't necessary for survival.
