I made this for dinner tonight and it was delicious. I made a few modifications based on what I had on hand: bacon instead of sausage, grape tomatoes instead of a medium tomato, and because I didn't have enough milk, I went half and half milk and chicken broth. It was so good my husband has asked to add this to the regular rotation for dinner!

I agree with the post in that I want to support sustainable, local farming. I want to support organic agriculture. I believe that big agri-business is creating a whole host of disasters for our environment.


It's awfully hard to think in the big picture when you're worried about being able to pay the rent. $7.50 for a dozen eggs seems like an unaffordable luxury when I'm trying to stretch a very small budget to feed a family. I wish there was a way to make sustainable, organic food more affordable for the average consumer.

I'm definitely planning more meals that will provide leftovers: casseroles, quiches, stratas, panades, etc. Definitely less meat, and I'm being more adventurous in terms of making dinner up based on what's in the cupboard, rather than buying to a specific recipe.

I also have the Rubbermaid version of these and I love them. I haven't had any tears, and I use it in the microwave quite often to heat my lunch at work.

I understand that the TV was put there to cover up the fireplace as well as prevent the kids from banging on the screen. I know I saw a post somewhere (that I can't find now) where a family put in a whiteboard over a non-working fireplace. They are cheap and lightweight, so could probably be hung with temporary adhesives/hooks.

We have someone come in every two weeks to clean our 2-bedroom apartment. We considered giving it up when my husband got laid off last fall, but I've discovered that a messy house raises my stress level to unexpected levels. I'm not a natural cleaner, so it's our one luxury that we're trying to keep.

Tile is too permanent to go completely wacky. In six months, you'll be over the animal print phase, and probably grow to hate them, but won't be able to to justify the expense of changing out the tile. Go bold with less-permanent design elements in the bathroom: shower curtains, towels, bath mat, or even fixtures like towel racks. That way, when you are sick of the safari look, you can get rid of it quickly.

We keep the porch light and one light in the front room (both CFLs) on when we're out of the house, mostly as a deterrent for burglars. Having the porch light on also makes it easier to get my keys out and into the door when I come home in the dark.

One note just to make sure no one makes the same mistake I've made: be sure to use Spanish chorizo (hard) and not Mexican chorizo (soft). I mixed them up and ruined a ATK pasta recipe.
