One of my fondest memories as a child in Spain (my father is retired Navy and we spent four years in Rota), was going to the department store in Puerto de Santa Maria (Hipercor, I think), and getting a rolled paper cone filled with freshly made potato chips from the vendor in the parking lot. I've served them roasted in tandem with pears to go alongside a nice leg of lamb. There were no leftovers, if that means anything. :) Apartment Therapy The Kitchn | Ingredient Spotlight: What's a Rutabaga? |

Flour Sack Cloth is another good option, and can be found in sizes around 30" square if necessary. I keep some for use in the kitchen as well as for sweat rags when I'm working in the yard. Some grocery stores will have them in the cleaning section with the sponges and whatnot. Most recently I picked up a pack from Bed Bath & Beyond. Amazon also has plenty. Great post. I'm new to the more exotic cheeses, so this was timely. Also, great tip, Jooleeyet. I'll keep that in mind when I make my New Year's Tortellini Soup next January. Apartment Therapy The Kitchn | The Cheesemonger: To Rind or Not to Rind? |

I think we need to define what we're cooking here. Starting from room temperature makes sense with any sort of grilling endeavor, but the frequent flipping advice is suspect in my opinion. A seriously thick cut shouldn't cooked on super high direct heat anyway. A reasonable 1/2" to 3/4" steak (as pictured above) shouldn't take more than a few minutes a side anyway. Chicken (even thick pork chops to some degree) on the other hand, sure... flip all you like. Apartment Therapy The Kitchn | Grilling Tips: Warm Meat and Frequent Flips |
