As a single person living solo...I love using up leftovers and unfinished foods for lunch. Today...coleslaw mix (w/o dressing), with a can of tuna, cut up red pepper, olive oil, a little champagne vinegar, s&p, and a few dabs of dijon mustard. Also brought a hard boiled egg and a yogurt. Yesterday though, I loaded up on Lean Cuisines on sale (for next week)... I keep low fat snacks at the office, tiny boxes of raisins, lipton cup a soups, 100 calorie packs of this n that.
