I think the problem is carageenan and not drinking alternative milks itself. After discovering that food manufacturers add carageenan and other additives to their nut milks, I started to make my own soy and almond milk. It's a pain in the butt compared to getting it from a box but I prefer the taste and feel secure about where my milk is coming from. I love dairy but I do think that consuming milk (in large quantities) is not so good.

I think if you are sensitive to the "fishy" smell, you are out of luck with mackerel. A miso-glazed fish might help ease the fishy taste of something like salmon or perhaps something cooked in coconut milk, like a curry?

Ditto about the tomato jam.

I also like to roast the cherry tomato halves for an hour or so until they are caramelized and shriveled up (or down!) and toss it in my salad. It's amazing how it will shrink down in size and almost taste like candy.

I made a yummy warm salad yesterday not realizing that it was vegan and gluten-free. Your roommate might like... sauteed butternut squash and farro salad (I used Satur's Crisp Cut Salad blend as my greens- a new find and my new fave!). You can dress it with any vinaigrette you want and maybe even add some nuts on top.

I also love the idea of a vegetarian tagine (think a combo of squash, sweet potatoes, carrots, etc.) served over couscous.

When my mom makes curry, she substitutes coconut milk with regular milk and it hasn't made me miss the richness of the milk flavor at all. Perhaps use whole milk.
