I stack them on top of each other, leave them in bowl with the plate on top for about 15 minutes or so, and then scrape off the skins with the knife at a 90 degree angle. It works really well, and it isn't a big deal. There are a few specks of black skin left on the peppers, but I think it looks nice and rustic. Don't get too emotional about it. I ate one of the best meals of my life when my friends and I made homemade winter squash ravioli with brown butter and sage sprinkled with chopped pecans. Better than most things I've eaten in a restaurant. The recipe is in Vegetarian Cooking for Everyone by Deborah Madison. You really can't go wrong with that book. I've traveled all around Europe, and the pastries in Sintra are by far the best I've ever had. Besides the Queijadas, I also ate some excellent meringues there. I live in New Orleans, and I have NEVER seen a clam in any of the regional cuisine. They're pretty hard to come by at all here. In terms of foods you should add to the list- mirlitons, satsumas, potatoes, artichokes, eggplant, green onions, thyme and the Cajun "holy trinity" of bell peppers, celery, and onions. Also, hot sauce, creole cream cheese, pampano, red fish, trout. BTW, no one here would ever call crawfish crayfish.
