I have cut the legs down on multiple pieces of furniture, because I like low things myself and to utilize their function better... a child's desk to a tv table, a side table to a little stand under the tv table to sit the dvd player and a wood card table to a coffee table for example. To keep the wobbliness from occurring, measure the height you do want of the legs from the top, rather than measuring what you are cutting off from the bottom (make sense?). I also double mark the measurement on 2 sides of the leg, cornering them, so I know I am cutting a straight line.
