The lemon wedges are most likely adding bitterness to the sauce. I would use the rind only (without the bitter pith) and a good squeeze of lemon juice to counteract the bitterness. Coconut milk is rich for sure but using skinless chicken will help. I hate the fatty aspect of chicken skin so never use it!

I think its a great idea and if you're going to entertain why not do it well with colour and imagination? It doesn't matter whether you are serving bread and cheese or the best quality meats and fruits. Why can't people keep their grumpy comments to themselves?

Aww, this brings back such lovely memories of reading and re-reading the Little House series and imagining myself in any of those settings. As an adult, I can only admire the Pioneer spirit and tenacity and marvel at what those ladies managed with limited resources.
How lovely that, in this age of computer games and starlets and girls growing up before their time, one little girl enjoyed a lovelt, wholesome party inspired by a fascinating era

There's nothing new about this tip. I watched a Syrian cook make hummus in the kitchen of the hotel I worked in years ago. He drained the boiled chickpeas, let them rest for a minute or two, then rubbed them well with a clean dishtowel in a large bowl. Then they were tossed into another large bowl, water poured over, skins floated to the top and were drained off. It took a few minutes for all this happen but then he was used to doing it every day!

You probably just used the words but can we please, please get past the 'angry spinster' label? It's bad enough when men categorize us into 'single, so has to be desperate' and 'married, so all has to be well'. Women should not label each other. I was very happily single till 35, married, had a child, marriage ended (thankfully) and am now a single parent with sole custody of my son, the remote and my life. It is not easy but I feel grateful for being able to run my life the way I want. However, I respect and admire those who are in good relationships and work to keep them that way. Each to his own.

Sorry for the long post-this is a subject I am a bit anal about.

Thank you however for saying that we should not save our loving gestures up for one day in the year :-)

I have made these eggs and they can be done in much less than thirty minutes. Granted I only scrambled two. I cut down on the butter but followed the basic principles and they were lovely. Not at all wet and runny (I hate those too) but creamy, comforting and so delicious. Nobody is saying these eggs should be cooked for breakfast or dinner every day. They can be an occasional treat.

I'm sorry but I cannot understand why everyone takes these posts so personally. Nobody is putting a gun to your head and forcing you to make or eat them. If you don't like butter don't make the eggs. French cookbooks are full of recipes with butter and cream. But nobody is forcing anyone to buy the books or make the recipes. This a site full of recipes and tips. Some are bound to be high-calorie.

Please can we stop referring to all this food as Indian? There is a country bordering India called Pakistan where the most amazing curries and kebabs are cooked and eaten daily. I love Indian dishes and have many Indian frends so this post is not meant to discriminate but please can we stop putting all curries under the 'Indian' banner and give credit to other countries that have curry on their daily, national menu? Pakistan, as mentioned, Sri Lanka, Bangladesh and so on.
