In some cases, I agree with these comments. But am I the only one who doesn't mind friends coming over and not cooking or taking us out to dinner? Or driving them to the airport? We have friends near the beach who live two hours away from the airport; we're 20 minutes away. If they asked if they could come the night before a trip and stay with us, I would be happy to let them. If I could, I'd offer to take them to the airport -- they're my friends! Nothing crazy this weekend. My husbands friend visited last night bearing fresh corn from his dads farm, so we ate that with a pasta salad made with a balsamic butter sauce and fresh tomatoes, plus prosciutto and goat cheese stuffed chicken. I seem to be completely ignoring the idea of not turning on the oven or stove to keep the kitchen cool, then I regret it in the middle of cooking. At least I have a lot of food in my fridge -- I've made fried chicken, corn casserole, Asian pasta salad, blueberry pancakes, roasted sweet potatoes, oatmeal-craisin cookies, and a big garden salad so far this weekend. My husband is in California for the weekend, and I've been painting the kitchen, so I've really slacked on cooking. For dinner last night, I just used some fresh linguine from the refrigerated section in the store, and made up a sauce with leftover chicken, butter, white wine, diced tomatoes, and mushrooms. On friday night, I made fish tacos, a holdover from Cinco de Mayo. I didn't cook yesterday because we went to a gala for a children's theatre. My recipe calls for a couple eggs, which I think gives it a delicious custardy binding. In addition to that, I make it with milk and cheddar cheese, then top it with just a few pats of Velveeta before making it to give it that extra melty cheesiness. I picked up a couple bison steaks a while back when I visited a bison farm for work (I'm a food editor for a regional magazine). I put them in the freezer and haven't made them yet. For some reason, I'm a little squeamish about it. What's the Deal With Bison Meat? |

Spaghetti. Really, just whole wheat pasta with jarred sauce. If my fiance is home, I'll microwave some frozen broccoli. If not, maybe I"ll throw whatever veggies are in the fridge into the sauce, but maybe not. No-Brainer: What Are Your Standby Meals? |

As always, I'm prepping food for the upcoming week. So far I've made a few salads, chili, and roasted veggie wraps with goat cheese. On the stove now is spicy coconut noodles. I also have to make a steak salad for my fiance, which will be made with leftovers from tonight's dinner of steak, roasted sweet potatoes and turnips and garlic rapini. What's Cooking This Weekend? I didn't cook anything yesterday, but I've been cooking/assembling all day. First was a week's worth of salads for lunch, then a week's worth of bacon, egg and cheese sandwiches for breakfast. Then I moved on to pasta with veggies in a lemon-wine-parmasan sauce and divided it into single portions. Now I'm doing easy chicken and dumplings with store-bought sauce, but homemade dumplings, with chicken picked from one I roasted last weekend. What's Cooking This Weekend?
