I have a bagful of asparagus bottoms. I also save wing tips, carcasses and random bones. We don't eat much seafood (I have gout, so if I can't eat shrimp, no one can..*hmf* ;) ) so no fish stock for us.
I also save the green and red pepper heads, carrot heads (orange and purple), sliced caulifower and brocolli stems, wilted lettuce leaves, and washed potato peels.
If I used canned veggies, and have some left over, those go into the freezer too.
I never thought about the cheese, but there is never any leftover cheese in my house anyways...lol

Seeing how teens are these days, she may be a bit blah about the whole thing. If she seems like she won't appreciate it when she is 18, maybe you could present it to her on HER baby's first birthday?
