we love making "pizza" bites with whatever leftover bread, bits of meat or veggies, cheese and sauce are leftover from the week. Cut into bite size pieces and heated until bubbly under the broiler, it's amazing how well most combinations of things can mesh together. What if you called them mini-martinis? A yummy gin or vodka martini is essentially just good, chilled liquor and whatever vermouth/olive juice etc you enjoy. I am a sucker for big tubs of pre-made hummus. We will often cook a whole chicken and need to reheat the breasts for later meals. Very gently warming the white meat in either chicken broth or a mild marinade keeps the meat juicy and can add some punch. We like using some orange juice, olives and harissa for a Mediterranean flavor or soy sauce, ginger and a touch of Sriacha for Asian. The key is to not let the liquid boil. It's a bit rough for someone who has the ability to work from home to judge people on the amount of time they have in the morning! I bought those too! We love cutting the thighs into bite-sized pieces and making an Asian marinade with fish sauce, soy oil, ginger, garlic, Sriacha, and soy sauce (let sit 12-24 hours) then grill.
