I just made pozole (correct spelling, btw) with my mom last weekend. I did soak it with lie for a while in lots of water. Then, after a while, I rinsed it really, really well. Cooked it for hours along with some good pork shoulder and aromatics. It's the best thing ever. What's the Best Corn for Making Posole? Good Questions |

This is a wonderful reminder about how much in control of our emotions/attitudes toward our life we truly are. I do this all the time and I didn't even realize how it was affecting me. After reading about wars/accidents/controversial topics, I find myself struggling to look forward to my day. I've also done it at night before bed, and it makes it harder to get to sleep. ( no duh!) I'm starting tomorrow. The phone stays in the charger on my landing strip by the door and I don't check it until I'm out of bed and dressed. Thanks Justin! I love AT! Chubby Vegetarian: very similar to what I've done. I actually prefer corn tortillas heated on a dry skillet, topped with the avocado mixture, egg, hot sauce. Now, couple this with a very hot cup of strong coffee, and I'm sorry but it's the best breakfast ever!!! Don't forget the sprinkling of good sea salt. THis is the first time I have everything in hand to make a nice DYI project. I'm in the middle of painting and redecorating my 10-year-old's daughter with a light blue and astrological theme. Lovely kitchen! I particularly like the windows and the shelves beneath. I would fill them with talavera and other lovely Mexican pottery, and all the cookbooks of the best Mexican cooks. Even her voice is peaceful and gentle, just like the way she farms. I loved hearing her dad saying that his daughter made him realize the connection of the diseased people in the village with the fertilizers and pesticides in their food. From my Sunday roasted chicken and veggies dinner, I had roasted onions, sweet potatoes and cabbage. Last night, I chopped them and tossed them with some green salsa, wrapped them up and put them in a pie dish, then covered them with more salsa and cheese. Here's the way I grew up eating calabaza (pumpkin) back in Guadalajara. Roast your favorite pumpkin in the oven, clean but include the seeds, brown sugar (piloncillo is better than brown sugar) and Mexican cinammon....You will be amazed how delicious the pumpkin seeds are in the syrupy mess. Beautiful thoughts. I especially think of the farm workers, most often with no rights and few benefits, who risk their lives to have those jobs so they may provide for their families, however humbly. My father, in his youth, was one of them. I always think of him when I drive down the highway and see the lines of people picking fruits and vegetables. For a full-fledged plan that takes you from a chaotic life to a life of order and peace of mind, look up "The Flylady". I read her book years ago and it changed my home life. I'm not as gun-ho (sp?) about it now, but I still follow the same basic principles. It's an amazing way to stay organized, and you CAN adapt it to a life with kids.
