Thanks for the comment Edin and for reading the post. I totally agree that California has tremendous sweet wines, which is why I suggested late harvest zinfandel form California as an option with chocolate, and specifically mentioned the Quady's Orange Muscat. Kangaroo - tasty and very lean. Rock buns (not dissimilar to a scone but less manicured in shape) and of course saltbush lamb - so delicious. My Oz experiences were mainly in South Australia. What Are Must-Try Australian Foods? Good Questions |

To Rosebud - poor QA/QC at bottling - if a yeasty beasty is lurking around and the wine is not totally dry it will start to re-ferment. Not what you want to encounter. Will go more into this + other faults soon in another post. What Exactly is a Corked Wine: And What Does Corked Wine Taste Like? |

To vintagejenta - Madeira lasts forever, even opened as the way it has been matured (heated) renders it immune to any damage/deterioration. However, tawny ports have not been subject to the same heat treatment and are a little more delicate. I may have been a bit precious with the 'week' limit to drink it but I wouldn't be leaving an open bottle handing around more than two weeks. Won't kill you but it becomes dull and looses its freshness. Once open all wines, even ports (but not Madeira) are subject to deterioration from oxygen. Hope this helps. The citrus nature of the lemon calls for something with high acid. But you don't want something very intense that could over-power the delicate flavors of the lemon meringue. Thank you Dana - we need to do 'nothing' regularly. I especially see it with kids (including my own 7 year old) who often says he is 'bored' when noting is 'scheduled'. To adr - there are a number of websites (though typically subscription such as Jancis Robinson's Purple Pages, Wine Advocate, Tanzer Wine, Wine Enthusiast that have detailed information on the various vintages, various producers and wines from all regions around the world. However, the environment where your wine rack is located is key - is it in a coolish space - not subject to fluctuating temperatures, which can ruin any wine. or not in direct sunlight? A favorite tried and tested recipe for us is a roasted beet salad. Roast the beets in foil to keep in the juices. Add to a salad of seasonal mixed greens, crumbled blue cheese, crushed walnuts.
