It's simply not true that cooking things destroys the nutritive value, as some earlier posters suggested. While beets are listed specifically, the USDA Retention of Nutrients lists both canned fruit (generic) and potatoes, and you can see that the majority of nutrients are retained.

It also depends on how you cook them, like itmaybejj said. For example, if you consume the liquid in the can, then you aren't loosing anything that might have migrated into the liquid.

Just wrap the zested citrus in plastic wrap.

The purpose of the waxy outer layer of citrus (the zest) is to prevent water loss. Therefore the reason zested citrus go bad so quickly is because they loose water and start to rot. Covering them with plastic wrap helps to replace the water-proof layer you just removed. Keeping them in the fridge will also help.

I think part of the problem is inappropriate use of cooking terminology, which is a react to the cooking ignorance of so many people. "Caramelize" is inappropriately used to refer to any browning that occurs when cooking onions, when in fact it refers to a specific type of browning that occurs due to chemical changes of the sugar within the onion. "Caramelize" is also misused to refer to the Maillard reaction, which does produce brown color, but for a completely different reason.

It seems to me that if someone is going to throw a fit over the misuse of a cooking terminology, and write an article about it, then they have plenty of time to correctly caramelize onions, so they should stop whining...

I fixed the watering proximity-problem by simply burying soaker hoses in each garden, then connecting those to the faucet with another longer hose. There is a timer connected to the faucet, so I won't accidentally flood my garden! Check out the pictures on my blog, Logan's Kitchen:

You are completely incorrect. Eating meat does not require killing an animal, just like killing an animal does not require that you eat it. Carnivorous scavengers are a perfect example to demonstrate just how wrong your argument is.

Just because the processes of rearing and slaughtering animals are linked to eating meat due to the way our dietary choices and the way our food system is set up, does not mean that the ethical questions are inseparable. You are choosing to conflate them, because it makes your argument easier.

You are conflating the issue, once again. The necessity of eating meat does not impact the ethic issue of doing so. That is a conditional argument, and just silly in general. Additionally, while killing an animal is arguably unethical, an animal that is killed for food is not being killed unnecessarily: it must be killed in order to be consumed. By implying that killing animals for food is unnecessary because eating animals is not necessary for survival (which is a condition argument), you are conflating the ethics of killing animals with the ethics of eating meat. If you can't distinguish between these two issues, then clearly you can't participate in this discussion.

If you would like to intentionally conflate two distinct ethical issues, then please keep it to yourself, rather than spreading misinformation. I am not nit-picking. I am making an important distinction that many people are apparently incapable of discerning on their own. Rearing animals, killing animals, and eating animals are three distinct issues, even if they all involve animals.

A scientific paper that shows a correlation between eating a certain food and a higher incidence of cancer and hear disease does not effect the ethics of eating said food. To make such an argument is just silly and naive.

This is actually a terrible idea. A microwave, just like any electronic appliance, creates heat, and therefore needs room around it for air to circulate. The microwave also has a fan, usually on the bottom or back, that blows the exhaust air out to keep the internal components cool. If you block the fan, the microwave is going to overheat much quicker, and you're going to ruin your microwave.
