I keep seeing pumpkin/squash+sage recipes popping all over internet but I can't find fresh sage over here. How would you substitute it with dried? Or what other fresh herb would work? I have lots of basil...

Many people here in Spain make a couple slight changes to it:

1. Fry a bit the garlic cloves in the oil, so they release some flavor.
2. Add bits of serrano ham or chorizo, fry.
3. Add bread, pimentón (not necessarily hot, I always use sweet bc the garlic is enough for me) and cook for 30 or 60 seconds.
4. Add broth.
5. When the broth is hot, poach the eggs in the soup. No need to dirt more pans, and all the flavor stays together.

Try this version, you won't regret it.

Oh, and for a milder soup, 1 clove per person is enough.

I can't believe you consider these plums as not-so-good for eating raw! Here in Spain we consider them as some of the best for that purpose. Maybe they taste different over here? I know that for example pumpkins here have nothing to do with their american counterparts, we just bake them and many people find them too sweet to eat plain! I think some fruits grow sweeter this side of the Atlantic, or at least in this country :D

I was so surprised to see a Spanish recipe in an international site... that is right! (don't get me started on Jamie Oliver's paella...)
The only changes I make are sauteeing the garlic before the bread (so the bread can soak the garlicky oil) and poaching the egg in the soup. I'm not sure if that's clear on the serious eats recipe.
Anyway, if you have some cured ham bits around (I've made it with bacon too!) add them once the bread is fried. Delicious!

Spain: cook with chick peas, cardoon, a piece of potato, a couple carrots, some celery, turnip, chicken, pork and beef bones (a bit meaty, please). Add salt. Take out the broth and make a rice soup with it. Enjoy the soup as a starter and then eat the meat pulling it off the bones and the veggies. Violà, you just ate a Valencian Cocido!

I never thought I'd see apartments from my city here! I don't like any of them, but it's exciting for once to be able to identify the exact place where the second one is by looking through the windows.

Style-wise, I'd say they're all too extreme.
The first one... Eames? let's put a thousand! The second, way too much wood, although it's not something so uncommon in that area and this is quite nicely done, if wood walls are your thing. And the third, though ultra modern and supposedly airy, is claustrophobia-inducing to me with the dark corridor and crooked walls... But again, I can guess which part of the city this is, and that style is what people was looking for here a few years ago.

I live in Spain, and I'm pretty sure we don't get Pumpkin Spice Lattes here. I'm soooo willing to try this, buuut... is there any substitute for the pumpkin pie spice?
I'll have to make my own "canned" pumpkin from scratch, but hey, if that's the price I have to pay to have one of these again... I'll do it!
