I soak mine for a while and then have it sit on a wax paper-lined cookie sheet before cooking. It gets all mushy inside!

I don't even care that the canned tomatoes I buy for homemade pizza sauce aren't San Marzanos, even though they're marked as such. I keep buying them because I think they taste the best on the pizza I make. Buy what you like!

Give up on trying to get your dough to be circular. I have been making pizza for years at home and this is my #1 tip. I get frustrated when I try to make it round. I just want it to taste good!
Let it sit for a while on a floured counter, covered in plastic wrap or a towel. I press it into an thick circle, which helps it stretch more evenly.
Stretch with your hands, pulling the sides and corners as you rotate the dough. I just let mine drop a little and it's usually fine.
I was so scared to overwork the dough when I started to make pizza that I never stretched it right. I made my dough in the food processor the first time (per a recipe I found on Slice; I had previously made it with a stand mixer or by hand) and it was even easier to work with.

I am a baker, and I definitely went through this recently, as my weekly Saturday night pizza sucked as did my 4th of July dessert (tasted good, too messy to serve).

I just stopped baking. I bought my bagels and went out for pizza and ate fun easy things I could make in my sleep, like pancakes. I'm better now--I made awesome bagels last weekend--but it took a while before I wanted to bake again. I still haven't made pizza, though and it's something I really love to make.
