My mom's trick for stews type, rich soups was molasses and vinegar. Mix 1 part molasses to two vinegar and mix in at the end. Works great for bean soups, beef stews, etc...

This is my favorite cilantro pesto recipe, it's from Megan Telpner and is Asian inspired. It has a great gingery bite and a hot tinge after I add a dash of frank's hot sauce. It goes great on fish, soba noodles, steamed veg, whatever. Also I make double batch and freeze it in ice cubes. Great for a quick dinner during the week.

I make my own porcini powder by grinding up dried porcinis in the dry blade container of my vita-mix. One of the best additions has been to pasta dough, replacing a bit of the flour with mushroom powder. It makes a homemade pasta with a wonderful, deep umami flavor. Usually toss with a sauce of mushroom, cream/milk, peas, shallots, wine and prosciutto.

Like many of the other posters, I always cook for one and rarely tone it down. The last two nights have been good though.

I went to a pasta making class recently, and turns out with a kitchenaid attachment, making homemade pasta for one is really quick and easy - in fact I prefer it to trying to make homemade pasta for a crew which can be so time consuming. One egg, half a cup of flour, pinch of salt and a bit of olive oil. It took me about 10 mins to bring the dough together, roll and cut. Then I saute whatever veg I have in my fridge with some good olive oil and lemon juice. Delish.

Last night I opted for searing some fresh snap peas on high heat, squeezing some lemon juice on top, tossing with some good olive oil, and shaving some cheese I had left over from a dinner party on Saturday (well lets be honest, shaving A LOT of cheese - an Umbracio)

So question.... I am looking for a binder - not targeted as a recipe binder because I like to make my own - that is a bit classy and different than the usual office binder. Any good ideas on places to get one? Some unique stationary/office supply stores? Thanks.

Put a heavy dusting of bran on the bottom of the pan, before you put in the bread. It slides right out after that. The bran will burn, but it doesn't effect the flavor of the bread and it doesn't stick to the bottom of your pan.

I made lovely cilantro pesto last night that oozes spring and sounds like it might meet your needs. I spread the pesto over fish (you could do chicken) and baked it, tossed if with some whole wheat pasta and had some steamed broccoli on the side. The pesto is made up of a whole bunch of cilantro, about a 1/3 cup almonds, a little over a 1tbl sesame oil, a little over a 1 tbl olive oil, juice of a half of lemon, some soy sauce, 1 tsp honey and about an inch of ginger. It is delicious. You can also freeze left over in ice cube trays. I usually keep this in stock in the freezer.
