I just moved from an apartment with a gas stove and oven to one that has an all-electric kitchen (plus the oven has a convection setting). I'm already struggling with the stovetop transition because controlling the heat seems very different. Any tips on cooking with gas vs. electric? And what's the deal with convection? I've never used it before.

Thank you SO MUCH for this tip! My roommate and I have a very loud and hyper-sensitive smoke detector that goes off for things like boiling water and toast. We're definitely going to try this.
