Thanks for the tips, everyone. It sounds like I didn't fill my jars with enough apples, and maybe the lids weren't on well enough. Didn't have any issues with the applesauce, which was canned hot, so I think a combination of everyone's tips will yield success, which is great news because I have about 30 lbs of apples to do something with before they age-out! There's a great cookbook called Time For Dinner that fits this situation perfectly because there's an entire section that shows how to make kid-friendly meals using the same ingredients that you're using to make a more adult-friendly meal. Because of this post, when I saw Bread Cheese for sale yesterday at my local market, I just had to get some to try. It is very delicious (sauteed this morning and eating with coffee, toast, honey and jam), but seems to be the same thing as the Indian cheese paneer, Does anyone else agree? Marmalade is a great glaze for meat and fish. Orange marmalade heated with some soy sauce is great over salmon, and mixed into a balsamic vinegar reduction with browned shallots is wonderful over chicken or pork! And I can attest to how WONDERFUL the Sticky Orange Cake is. It's my favorite cake recipe! I don't think I've ever even tried marmalade on toast, now that I think about it! When I was younger my bedroom was in the unfinished upstairs of our cape cod style house. No heat in winter, no AC in summer, but I loved the privacy! On the hottest nights I would employ window fans, and a spray bottle, set to the finest mist. My husband and I do this whenever we go walking in a park. We keep extra plastic bags in the car just for this purpose (although it actually started because of the doggies)! Some people think it's kind of gross, but I think it's nastier to walk past plastic bottles and other trash and not pick it up. And yes, we do wear plastic gloves, too! I used to have this problem, and the solution for me was to cut the baking soda amount, and be sure to accurately measure the flour (don't put too much). The Nestle Toll House recipe off the chocolate chip bag is what I still use as my go-to choc-chip cookie recipe, but I cut the baking soda by over half each time, and get thin cookies with crispy edges and chewy centers. So glad to see that everyone's got one of these! My first foray into using phyllo dough didn't go so well. The layers of dough were rolled together when I took them out of the box, and I didn't notice that the first layer was actually paper! Unfortunately my recipe called for layers of phillo to be rolled, baked and sliced, so the paper was completely spiraled throughout the entire thing! What clued me in was how difficult it was to cut!. Impossible to eat without first unrolling the entire thing to remove the paper. I second the experiementing idea - I roasted some easter egg radishes the other day (got a ton from my CSA) and they were surprizingly good. Similar in texture to turnips, with a nice peppery flavor.
