I agree 100% on the knives. I, at the last minute, grabbed a 4" paring knife with me on a trip I went on last year. I used it for absolutely everything because the knives in the efficiency we were at were miserable.

I bought the "Joy of Cooking".
Interestingly, the grandson (Ethan Becker) of the original author (Irma Rombauer) of that cookbook is now a knife designer, and some of his designs are being sold by a sister company of the company I work for. He doesn't design kitchen knives, he designs sporting knives.

I grew up in Cuba, N.Y., which has a long history of cheese-making (there's even a cheese museum there). They still manufacture cheese in town, and at the Cuba Cheese Shoppe, the cheese curd is my favorite and it very squeaky!

I work for a cutlery company and suggest that when choosing a knife you also look at the quality of the steel. A high-carbon, stainless steel knife will insure that the knife can hold a sharp edge (high carbon) and resist corrosion (stainless). All-in-all though, Faith has it right, find a knife that is comfortable to hold and feels like an extension of your hand.

Great video. Even though I've worked for a cutlery company for 8 years, I just recently started using this method and I'd never go back! It's also very important to have a sharp knife using this method.
