I agree 100% on the knives. I, at the last minute, grabbed a 4" paring knife with me on a trip I went on last year. I used it for absolutely everything because the knives in the efficiency we were at were miserable. What Kitchen Gear Should I Take With Me on Vacation? Good Questions |

I grew up in Cuba, N.Y., which has a long history of cheese-making (there's even a cheese museum there). They still manufacture cheese in town, and at the Cuba Cheese Shoppe, the cheese curd is my favorite and it very squeaky! I work for a cutlery company and suggest that when choosing a knife you also look at the quality of the steel. A high-carbon, stainless steel knife will insure that the knife can hold a sharp edge (high carbon) and resist corrosion (stainless).
