My parents are Indian and Vietnamese so dessert was almost always some sort of fresh fruit kept very cold in the fridge (mango, papaya, asian pears, lychees, sometimes oranges). Sometimes there was rice pudding and for super special occasions, ice cream.

For weeknight dinners, it's anywhere from 15 minutes to an hour - but I usually have a lot of things pre-prepped for those meals (i.e meats already cooked from the weekend, frozen soups/stocks, pre-cut washed veggies). If I'm cooking something totally from scratch it will be between 1-2 hours.

Nothing wrong with buying within your means! I still can't afford a regular price Le Creuset, I've always gotten my pieces from Home Goods/Marshalls for around $100. I know they're slightly imperfect and they don't always have the prettiest colors, but I don't mind - they still cook beautifully.

I did this in my last apartment...it was totally necessary, there was only one drawer in the whole kitchen and it could only fit aluminum foil and plastic wrap!

I usually don't take it back, but I call and let them know. Once I bought a rotisserie chicken and it was pretty raw inside. I was going to use the chicken for soup so I didn't have to throw it away, but I called them to let them know and the store sent me a gift card.
