My favorite skate preparation is w/a balsamic glaze and served w/french green lentils. Mmmm.

I also thought "to the bell" was the standard for red wines -- although I guess it could depend on the glass shape. I guess because this is my assumption, I only get annoyed in a restaurant if they pour less than this, regardless of how large the glass is. If they pour more, well, I sip carefully and count myself lucky :)

As long as I'm cooking and enjoying what I cook in the company of my husband and often good friends, I don't see that being a foodie has any negative effect on my weight. Quite the opposite, actually. One huge benefit to being a foodie is that you already associate more with food than the # of calories and fat grams each serving contains. Food is not just fuel. It's a cultural language, social currency,

Case in point, I only overeat when I'm eating alone. So, to control this, I portion food carefully and make sure to sit down for meal at the table even when I eat alone. This helps me to be present at my meal and enjoy it, even if I'm not sharing it with anyone else.

And, as many others have said, exercise is key, not just for weight management. There are SO many other physical, emotional and social benefits to being active. I tend to think that anytime we view food, exercise, etc. as means to the goal of being skinny, we not only miss the point, we end up destroying so many of the good outcomes we could be enjoying as people who eat well and move our bodies.

This is one of my favorite brews! It is definitely quite hoppy, but if you're into hops, this beer has a real depth of hop flavor that isn't present in most beers that are as widely available as this one. Incredibly clean, herb and citrus finish. I'd highly recommend it to any hop-lovers out there.

My chocolate-chip cookie secret is to use only dark chocolate chunks and add a sprinkle of sea salt on top before I pop em in the oven. Otherwise, I follow the Toll House recipe.

I inherited handwritten copies of my husband's grandmother's special recipes because I'm the only one on his side of the family who really cooks! It was such an honor to be the one to receive them ...

My go-to cake is a lemon-olive oil number from Gourmet:

Sometimes I whip up a batch of lemon curd to spoon on top. Sweet!

I find the opposite ... but then I'm primarily baking bread. You just can't beat the radiating heat of a gas oven for making perfect crust!

I've had my set of Victorinox knives (a wedding gift from my mom, who researched them extensively) for 6 years and they are GREAT. I would highly recommend them as an affordable set.

When I was in Spain at cooking school just south of Barcelona, we used Maldon salt. If you really want to recreate those dishes, consider a cooking school vacation someplace like where I went: http://www.catacurian.net/. It was well worth the cash! I learned a ton about Spanish food, as well as a lot of the kind of passed-down-for-generations food wisdom that we often miss out on here in the states!

Does this mean I should stop freezing my giant hunk of parmesan cheese and using it over the course of a month?

"Is your milk still to be considered food if it keeps so long??"

Good question ... half the time I'm not sure if most things sold in the grocery store can be considered food!

I don't run into the expiration date problem very often b/c I try to avoid overly processed foods. I usually buy meat frozen (that's the way my local producer sells it b/c of the processor having to comply w/state laws that don't take into account small, local farms).

I'd say cheese is the most frustrating one for me, especially veined cheeses. The good mold is yummy. But the bad mold? Horrid!

Well, it can't hurt, right? I only plug in my small appliances (toaster, espresso machine, KitchenAid) when I'm using them. And I'm constantly unplugging them b/c my husband thinks it's silly to unplug them. But I don't unplug my stove or microwave, since they're built in and harder to get to.

my other fave cabbage treatment is stir-fried w/soy sauce, ginger, garlic, or just sesame oil -- especially the red cabbage, which turns anything else you decide to stir-fry a pretty red color as well

We shoot for somewhere between simple and traditional, I think. I would like to be more sophisticated, but our kitchen is small, so we just spend our time trying to make it clean, well organized and functional. Would love to have enough space & budget to have a kitchen that looks like your sophisticated example!
