I think this article overlooks what I call the single person factor. Because I don't have a family, many products don't last as long as they need to for me to use them up, especially bread. I've got a sort of strange philosophy about these foods. I love tofu and tempeh and seitan, but I can't pretend that they are real meat. I'd rather see "breaded seitan" on a menu than "vegan chicken". I feel the same way about soymilk too. It tastes good for what it is, but it's a poor substitute when you really want milk. A carton of egg whites has 1 purpose in my kitchen but it's a vital one: cocktails! Egg white cocktails are trendy, and while it's arguably a little cooler (and cheaper) to just crack and egg and separate the white, it's a lot easier with the carton. It also helps if people are nervous about salmonella (despite the overwhelming odds of not contracting it) as cartoned whites are pasteurized. JimK_MoA, that makes no sense. Alcohol evaporates at lower temperatures than water does. This is the entire basis for the distillation process that creates the vodka in the first place. In the case of rum cake I'm sure that some residual alcohol is left behind, but those retain a lot of their moisture. I've made vodka pie crust, and the crust is hardly wet when you finish. Meat pies! I'll make a pie and cover but not refridgerate it. It's good for two or three days (if you can go that long without eating it all) and just tastes better and better. It can be reheated or not. Ketchup or sweet chili sauce if you like. And the slices are a convenient food to eat with your hands as you run out the door to catch the bus.
