How many bedrooms does this house have? I think that's really important to know before deciding what to do with this room. If it is a 4 bedroom, turning the walk-through into an office won't be a big deal because selling a 3 bedroom house is still pretty easy (compared to 2 or 1 bedrooms). I agree with the office idea. I would make it coordinate visually with the back bedroom so you can sell it as kind of a master bedroom with sitting room/office. Changing that bed out with a couch, and adding a bookshelf would probably make it feel bigger and give it that office/sitting room feel.

This is going off on a tangent, but more than I hate any specific design element, I hate people looking for specific design elements on HGTV shows. They are:

Paint and lighting! Is this a rental or do you own? If you can paint the cabinets, that would change the whole look of your room. Personally, I'd go with white or a light neutral on the cabinets and then paint the back wall a more dramatic color. Something cute like chalkboard paint under the cabinets/as a backsplash will make it interesting. Then I'd add a few colorful canisters or bowls of fruit that compliment the walls. Change out the cabinet door hardware to something modern in a brushed nickel. And finally, go to IKEA or somewhere cheap for a cute chandalier and a small throw rug. And if you have extra money in the budget, a more stylish stainless steel or colorful metal (IKEA again) garbage can would add a lot too. Overall, this kitchen could be adorable for a little more than $100. (PS I'd also clear off the fridge magnets and the boxes on top.)
