LOVE grits. My mom used to make them Saturday or Sunday morning when I was a kid. Now I always have dried grits in the pantry, and have made my Cali-grown boyfriend a grit convert. Definitely more substitution tips. I have too often found myself missing an ingredient for a recipe (ie, sweetened condensed milk last night), and spending too much time trying to find a suitable replacement. Also, maybe more tips for people with lactose allergies. Can't wait for the book! We're Writing The Kitchn Cookbook! |

My dad has a trick that he'll use: if the milk is questionable, he will pour some into a clear glass and swirl it. If he sees a bunch of little (we're talking almost pin-tip sized) bubbles going down the side of the glass, he considers it bad and tosses it. I think he is checking for the number of bacterial colonies, and as weird as it sounds, I have tried the same trick on fresh milk but have noticed far fewer, and in some cases 0, bubbles. Just made this last night. I didn't add corn (I cannot stand the texture or taste), but instead included the cayenne pepper and black beans. I also threw in some chickpeas, because why not. It came out nicely although I would add a bit more cheese for next time. And I agree with the post above about using as a dip for tortilla chips. I had that exact same thought last night.
