I love grilling unconventional things, so how about grilled pizza? Either make or buy some raw dough, shape it, slather it with olive oil, and toss it on the grill for 2 minutes or so; turn it over, top it (the simpler the better- I like a thin layer of tomato sauce, cheese, and a few cooked toppings like prosciutto or cooked veggies) and it will be done by the time the cheese is melted. I am a pretty big wine lover, but there are a few people in my social circle who don't drink, as well as a few who sometimes do and sometimes don't. I think it helps when you know people's preferences b/c then when I plan a party I make sure to have some lemonade or hot tea or whatever on hand so I can offer something more interesting than water. I love this roasted tomatoes and onions recipe from smitten kitchen. I usually throw in some drained canned artichokes into the dish when I'm roasting. I think you could roast the veggies the night before, then reaheat them with a can of beans the next day and just pour everything over some bread prior to serving. Maybe whole wheat pasta topped with veggies (I like sauteed kale) and a poached egg? I'm sure you already know this but try out a meal like this before a non-race long run to make sure that the veggies don't affect your stomach! Too much roughage can be problematic for some runners. I've never had a problem from eating dairy the night before a race, for what it's worth. I usually have mac n' cheese or something like that! Either an omelet with spinach (and feta!) or a green smoothie- basic recipe is 2-3 cups of raw spinach, 1 cup almond milk and 1 whole banana. I usually don't tweet my breakfast unless it's out of the ordinary, but I often tweet my dinner. I love to cook and making dinner every night is a huge creative outlet for me. It's also generally the most interesting part of my day on weekdays- haha! So if I tweet my dinner it's because I've made something I'm excited about.
