I use the oven and my perforated pizza pan. Two La Tortelleria (local homemade brand in Denver), and I chop all the ingredients in my mini chopper. Usually chicken, red pepper, red onion, black olives, green olives and pepper jack cheese. Salsa and guac on the side. Usually only takes about 12 minutes. Not much cooking this weekend, but lots of planning for the next few weeks. Grilled German Sausages for dinner tomorrow night. Planning an Eggplant Parm one night this week and planning on those leftovers for my hubby while I'm out of town on a trip this week. Thinking a Chicken Fajita Casserole too. Made a lasagna, a pan of chocolate chip bars (I hate making cookies) and prepped an apple crisp to take to my brother & sister in laws for dinner tomorrow night with a salad and bread since they just had a baby.
