one more comment: You might want to consider buying (or borrowing from a sympathetic friend) a toaster oven. Then you can broil fish etc. They aren't that expensive and if making real meals is something that will help you with your stress levels and happiness, it might be worth it. My apartment gets so hot when I use my oven that I only use the toaster oven in the summer and you would be surprised at all the things I make using the broiler. The secret is to really preheat it. you must use dried, not canned, if texture is an issue for you. In addition, I suggest using the Thomas Keller method. I can't find it online (it is in the Ad Hoc cookbook) but here is his recipe for Cassoulet, which is also pretty amazing and features tasty beans. Can You Help Me Learn to Love Beans?
