i have been making chicken teriyaki recently but i am having the hardest time to get flavor into chicken breast. i have try pan searing and then finishing it in the oven, and I have also tried poaching the meat on top of the sauce (after searing both sides), but nothing seems to work besides slathering on a lot of sauce, as my friends have suggested. I have been making Teriyaki Chicken BLT with homemade mayo, and Teriyaki chicken tastes absolute brilliant with Mayo BLT (give it a shot please!). I have this book! I treat it as a textbook; everything dish in there is basic way of cooking meat: braised, stewed, grilled, etc. Although I haven't even gotten through 1/4 of the book, I did try some of the exotic recipes such as lamb kidneys and they turn out fabulous. The book is a little pricey. I spent 45 dollars on it. But the information I get is priceless. It does make me think about the meat that I consume. Even though I don't buy organic meat for every meal, I have learned to cook my meat with respect (the last thing I could do for poor animals that had been treated poorly in farmhouses. Does anyone have any recommendations for buying a great scale? I have bought three scales so far and they all have major flaws. One of them only has kg and lb. Another one is too small for weighing big objects. Finally, I recently bought a digital scale, but it does not respond well to condiments or small amount of ingredients - I try to measure 1 tspn of ground ginger and it does not show any measurement. I know it's unusual to measure ingredients in such small amount, but I am currently running a small business and I need to know everything accurately in order to determine my cost. Thank you! I went to the website and saw it costs 499 for the whole set. It's not expensive if those knives are as great as they should be...but dropping 500 on knives...ehhh a bit out of my price range at this point. Thanks for the link though! well...isn't judging 1 challenge at a time the whole point of Top Chef (even Fabio said that)? So what's wrong with Hosea winning because he played the game right? That's life isn't it? And comparing Top Chef to Tour de France? Last I checked, Stephan could have been eliminated for overcooking that piece of Salmon in the "Last Meal" challenge.
