I'm not a picky eater at all, but cooked pineapple has always been a bit nauseating for me. However, thanks to this tasty cake recipe, I'm beginning to move past it.

Although I defintely won't be ordering up Hawaiian pizza any time soon....

I agree with mimidoo2! The night-ahead prep makes for the absolute easiest day of cooking ever. Plus if you're cooking a roast or large hunk of meat it has some serious marinade time.

My favorite slow cooker conversion are these Korean BBQ tacos: http://missfats.wordpress.com/2013/04/20/korean-bbq-tacos/

Lots of soups with hearty greens and beans! Here's one of my favorites that's so easy and can be eaten all week:

Also ethnic food is a great place to look for flavors so those low carb, high veggie meals feel more satisfying. A big Asian slaw with spicy peanut dressing is a go-to, or hearty greek salad with some meat balls spiced with shawarma seasonings and topped with feta cheese. My favorite weeknight meal is throwing together an affordable veggie curry (or add a little meat- a great way to stretch it) over a big bed of roasted cauliflower instead of rice.

I know I've suggested this elsewhere before, but seriously, these cookie bars are insane. I DARE anyone to only take one bite:

mochi mochi and more mochi. So much red bean in my life. Can't tell you how many times I've bit into a fluffy looking pastry expecting (hoping for!) cream and getting a mouth full of sweet red or white beans. Needless to say I've developed a bit of complex over the years: carefully splitting all my pastries from now on to check the filling first.

These Salted Chocolate Butterscotch Cookie Bars are a new addition to my crowd-pleasing short list. HUGE hit, gone almost instantly, and one of the easiest cookies to throw together:

I bake weekly for a department seminar, so I've been trying out a number of homemade, portable and easy to eat treats. So far these muffins have been the biggest hit!

Excellent question! I made up this little recipe last night inspired by that great post on warm salads from last week. It's really tasty cold!

Actually not I item in my place (#5) (except my couch which was still only $150) cost more than $70! It's just a LOT of patience with craigslist, goodwill and some DIY!
