I was working for a caterer, out setting up someone's holiday party. Number one rule: don't light the flame under the chafing pans without putting water in the pans. I come along, see chafing pans with no water and assume that they are not lit (especially as I was working with the owner of the company that night), pick one up at the edge and slide my palm full length down the bottom of the pan to pick it up....YEOWCH!! Yep, she had lit the burner without filling the pans with water. I ended up going to get it looked at the next day and getting a prescription burn cream (thank goodness for that stuff, it's amazing!)

I agree with other posters that it's wasteful to use food in this manner. Personally, knowing that there are so many people worldwide without enough food, well, I just can't do it. I feel similarly about making potato prints and the like. It's easy enough to make stamps with rubber or sponges that last longer.

I use Lorna Sass's Vegetarian Cooking Under Pressure for reference, and just discovered that I don't know where it is at the moment (eek!)

But, from memory: bring 4 cups of water or broth to a boil in the pressure cooker. Slowly whisk in 1 cup of polenta and a little salt. Put the lid on, and set the whole pot on a heated flame tamer. Bring it to high pressure, and cook for 5 minutes, remove from the heat and let the pressure come down on its own. After taking the lid off, stir and it will thicken up nice and quickly. If there are any lumps at this point (rarely) I can usually smash them with the back of a wooden spoon.

I love the pressure cooker!

Polenta is an excellent foil for almost anything, in my experience. And it cooks up in a snap (no stirring!) in my pressure cooker. I love polenta!

When I was a child, our upstairs neighbor was an aspiring opera singer. In true child fashion, I found it a bit annoying, but can now recognize how lovely his voice was, and I wish sometimes for a musical neighbor again. Recently, there was someone who would be practicing violin with the window open in an apartment that I passed on my way home from the el, but the violinist seems to have moved.

I use glycerin instead of oil, as lots of oil going down the drain is not so good. Added bonus: the bottom of your tub doesn't get slippery. You can still add a few drops of essential oil without it bothering the drains.
