In all fairness, the dryness of the breast meat could have been due to cooking too long. I was expecting the cooking time to be 2 1/2 hours (12 lb. at 13 minutes per pound). When I checked it at 1 1/2 hours, the meat temperature was already 180 degrees F. Quick Tip: How to Brine Meat |
