In all fairness, the dryness of the breast meat could have been due to cooking too long. I was expecting the cooking time to be 2 1/2 hours (12 lb. at 13 minutes per pound). When I checked it at 1 1/2 hours, the meat temperature was already 180 degrees F.

I brined a turkey using the basic formula here (salt and water) and was not especially pleased. The turkey was much too salty for my preference, and the breast meat was not as moist as I expected.
