I attempted to make last night. Mine didn't caramelize, but stayed pale yellow the entire time. Not to mention the mixture never harden at all. Only after consulting the previous comments and the original recipe on the Food and Wine website, I realized this recipe left out a key piece of information. You must heat the mixture to 300 degrees. If the temperture isn't high enough, the mixture will never caramelize despite how long you keep on the stove. Salted Pistachio Brittle (Better Than Christmas Cookies!)
