I would think for mac and cheese, silken tofu would work pretty well in place of cheese. Mustard powder makes for a strangely effective cheddar dupe. What Are the Best Dairy Substitutes for Savory Recipes? Good Questions |

We're trying it for the first time this year--with plans to process and preserve unused veggies for later use. I like the idea of supporting local farms and the creative challenge of finding ways to use the veggies, but if we're not happy with the quality of what we get, I don't think we'll do it again. I disagree--I think asking to host pets that are not service animals is unreasonable (unless, maybe, like, someone is stopping overnight during a cross-country move and therefore naturally has the pets with them). Overnight Guests: Can You Just Say No? Reading My Tea Leaves |

I find that the only way I can survive afternoon sluggishness is to have very few carbs at lunch (this usually translates to a hearty salad with lots of cheese, legumes, nuts, etc). So, definitely no pasta or baked potatoes. Even the two measly pieces of bread in a sandwich will do me in. Which is a bummer, because I love a good sandwich, but I save them for dinner. My go-to breakfast is about half a cup of cooked quinoa stirred into a cup of yogurt (I like lowfat plain, but full-fat Greek is super delicious), maybe with some berries or dried fruit or chopped nuts if available. I make a big pot of quinoa on Sunday, portion it out with the yogurt, and breakfast is done for the week. (The quinoa really holds up and is not any mushier on Friday than it is on Monday.) 15 Whole Grain Breakfasts to Start Your Day Off Right Recipes from The Kitchn |

Eh, it's not my preference but I don't really care what other people do. I will usually make a week of steel-cut oatmeal breakfasts on Sunday night (I am also out the door at 6), but I have no kids and a largely self-sufficient husband, so I have the leisure. Do We Really Need Quick Oatmeal? |
