I use Olivier and CO Olive oil because they can certify where its from and they only buy top of line from small independent producers all over the Mediterranean. They are on the pricier side but i really notice the difference and they are generally good for about 2 years. I have a huge collection of finishing oils and some oils I just use to cook or sautee.
