Strata!! My favorite is spinach and cheese from Annie's eats. It can easily be halved and baked in an 8 by 8 pan. I totally agree with the cookie suggestion. Teaism here in DC serves those kind of shortbread cookies and they're delish. veggie and cheese quiche cups! Saute veggies; while they are cooking, mix 4 eggs (about 3/4 of total eggs) and 3/4 cup of grated cheddar cheese. I actually live in a building in DC that doesn't allow grills so a grill basket won't help me out. If I'm the host/griller, I'm not worrying about the contamination on my own grill. The really bad thing about grilling vegetables is worrying about if the grill is clean, if separate utensils are being used, etc. It stresses me out too much if I'm not the host/cook, which is too bad since grilled veggies are delicious. No Fake Meat: Vegan Grilling Recipes from Food & Wine |
