I asked my husband, who started cooking only in the last few years. He said to keep things simple. Make recipes that have just a few ingredients. I would add to give yourself plenty of time. You'll gain speed as you gain experience. Enjoy making something tasty for yourself. If you find that you don't really like cooking, but still want to cook for yourself, find some simple, quick recipes that you really enjoy eating. And, have the ingredients for them on hand always. You could freeze the cupcakes and frosting seperately. You will need to re-whip the frosting. Mascarpone frosting doesn't work (learned the hard way) but American buttercream is fine. I don't know, but I think other buttercreams might pose a problem. You could experiment. Anywho, freeze the cupcakes on a sheet tray then bag them. The frosting can be frozen in a plastic container. The cupcakes will defrost at room temperature in less than a half hour. The frosting would take longer but, if you are careful, you could microwave in 30 second intervals at 30% power or so. Re-whip the frosting and proceed. The only reason I wouldnt freeze frosted cupcakes is that it is hard to store that many and not muss the icing. Good luck.

Based on Amandica's suggestion to use it as a salmon substitute.
I've had good luck re-heating fish soup. I nuke it a minute or less at a time to just get it to temp without cooking the fish further. I would also try the fish cooked in foil packets. I love fish this way - less smell, less mess.

Viagg... Without seeing your kitchen of course. You can attach cleats to the wall beside and behind the dishwasher and to the cabinet side. Depending on what type of counter you get you can attach it by screwing from below or with silicone. Good luck.

Supper cute. I love the way you have separated the uppers for display space. The wrap around counter is very chic. I like that room has been left for seating, but you could build in shelves if you would like more storage. Very nice.

Is there a mini-bar? They wouldn't count it as a fridge but you could have them empty it and it would be plenty of room.

I would find a close-by grocery. You can use their salad bar for salad and for veggies for other meals, get small amounts of meat from the deli to make sandwiches, stock up on fruit... Many have hot soup available. If they have pre-prepared foods, ask if they can heat them for you in the microwave. The coffee maker is your friend, you can use it to make oatmeal, couscous, Asian noodles. The iron for grilled cheese or "panini" (wrap in foil) really works.

If there is a coffee shop nearby you can get a small milk in a large cup and add your own cold cereal.

And, if you are substituting for buttermilk in a recipe, you may need to decrease the baking soda in the recipe. If you find your cake is a little fallen, decrease the bs a little.

I substitute water for milk in a lot of recipes (especially cakes). I use oil instead butter. I usually use less than a 1:1 conversion. Some nut oils can ybe especially delicious and olive oil has been pretty popular in cakes. Cream is harder to account for. I might try a coconut product. Good luck.

You could stop the clanging by tacking a piece of elastic (big rubber band...) to the door at the point the cup meets the handle. The idea needs work but it's a start.

Brooklynnine: you could keep a roasted or braised meat in the freezer packaged in single meal sizes that can be easily nuked. You could either cook them yourself or buy it already cooked at the market and break it down for later meals. I try to have pre-roasted chicken in the freezer which is easy to add to pastas. I just soak overnight filled with water and a little dish soap. In the morning, I dump out the water, sprinkle with baking soda, and use a scrubby. Usually it comes up very well, but if not, I just repeat. Good luck.

I use my mandoline for any veg I want shaved thinly (salads...). I have decent knife skills but it is an easier and quicker way. Be careful of cutting yourself. Mine has a ceramic blade, plastic handle, and was purchased inexpensively from Williams Sonoma.
