The kitchen before the jump looks great, because the colors are within a limited range of affinity. The others just look like paint sample showrooms.

Unfortunately, ramps will be "gone before you know it" because they are being rampantly (pun intended) over-foraged by people who are trying to cash in on the market for a trendy ingredient but don't know how to harvest responsibly.

Yes, those egg whites are WAYYY over whipped, they will never fold in smoothly. It's also much more efficient to fold and turn the bowl simultaneously, Turning the bowl a quarter turn for every fold towards the folding hand.

There's no need to use a food processor--just combine everything in a bowl, put it over hot water and whisk until it thickens. The butter will melt and be incorporated, and if you use grated zest, you don't even have to strain.

Those old cabinets are great--they look like punched tin. I agree they could have been better configured but what a shame to lose them.

I don't have a magnetic strip--I discovered that I can slip knives, blade down, into the tiny gap between my Ikea work table and my kitchen counter, which are exactly the same height. The handles rest above the counter where I can easily grab them, and the blades are below, safely out of reach. These are all great looking knife strips, though!

I agree with Splitty--music and cooking go so well together, especially when you're cooking alone. All these suggestions are spot on, especially #10. I like to take those deep breathes before I start cooking, to remind me to center, relax and enjoy. Thanks!

Lovely, warm and welcoming house. I live in a similarly configured SF Victorian and it's always interesting to see what other people do with the same kind of space. However, these flats are notoriously poorly insulated for sound and I can hear my neighbor playing the piano for hours everyday--fortunately she's a concert level pianist!

Agreed--I never roast nuts higher than 300 degrees. Besides the risk of burning, at higher temps it's harder to get nuts, especially almonds, to brown evenly all the way through. And pine nuts will burn the minute your back is turned.

These are all great tips--thanks Andrea and Dana! Although the web is a great resource, I find the best recipes usually come from cookbooks, not the internet. A big reason for that is context, as Andrea points out, and knowing the source.

How did I get along without one of these for all these years? By doing exactly what mh330 does, leaving the lid slightly ajar. I have enough useless gadgets gathering dust in my drawers anyway.

elalexid, this is a good way to regulate how fast something is boiling--with the lid completely on, it boils too rapidly; completely off and there's too much evaporation.

Baking soda is sometimes used to help dried beans soften when you cook them. With canned beans, there's no reason to use it and I suspect that it's a holdover from a version of this recipe using dried garbanzos. That said, this recipe looks completely gross.
