I also had gestational diabetes, and there really aren't a lot of good options. I did not enjoy what I was restricted to eating. But I question the fact that this will be a lifelong thing. Assuming the pregnancy weight is lost and overall a good eating and exercise plan is followed, there should not be a problem. 26 years later, my blood sugar level has not been a problem.

Roast and chop the fennel bulb and use it in a fritatta. I've used the fronds as a substitute for dill in potato salad.

I don't know the nutrition info, but Trader Joe's frozen Pizza Margherita is very good. The three-cheese is not quite as good (more cheese), but the Margherita's cheese has animal rennet so I go with the three-cheese version. TJ's also has a "Reduced Guilt" frozen Pizza Primavera which is excellent -- 250 cal for the pie, which serves one. Lots of veggies, thin-thin crust, and very little cheese. Better than it sounds. I recommend adding back some of the guilt -- I usually add sauteed mushrooms and some feta or goat cheese.

Another trick with frozen pizza is to cook at higher heat than recommended -- I usually cook them at 500. And adding greens is a great idea -- chopped baby spinach is good.

Madhur Jaffrey has a nice ginger limeade in her World of the East vegetarian cookbook. You could probably just do it w/o the recipe -- the key is grating the ginger and squeezing the juice into the limade.

I too managed to snag the frozen leeks once, and haven't seen them since. That seems to be part of the TJ charm. Their brown basmati rice is also very good, but only appears intermittently at my TJ's.

And as for the lack of TJ's in CO -- I doubt it has to to with not being able to sell wine. The county laws where I live don't let them sell wine either.

Can't be microwaved. I have a bunch of steel tins from India -- although mine don't lock together in a stack like this. They are great for carrying lunch, the lids fit on very tightly. But no microwaving!

I agree with MaryWynn. I would try to avoid regular use of TVP and use tofu or tempeh instead, or beans, all of which are not processed foods.

I used to have an IKEA one as well, but the weight was never the same twice -- you could step on it twice in five minutes and the difference would be as much as 9 lbs up or down!! I bought an analog scale -- not as nice as that red one -- from Amazon for about $30. More reliable. I weigh myself a lot.

I agree with QueenoftheFall -- if you eat fish, you are not "borderline" vegan! And that makes it much easier for you and your dad -- why not just eat a lot of fish while he is here?

Re bleeding the radiators -- if the heat is actually steam heat (not hot water), you cannot bleed the radiators. I have steam heat in my house, and it is extremely noisy. Lots of banging and hissing.

Re handmade rugs at the lower end -- I bought a very large (10x12) wool oriental rug from overstock for about $400 (and 4295 shipping, of course!), and it is handwoven. It even has the certification of no child labor (cannot remember what the organization is called). But if you buy online, make sure you like it, because I cannot imagine how much it would have cost to ship a rug that heavy back.
