if you are getting anesthetized, you may be very nauseas for the first 24-48 hours. I would stick with very simple meal ideas.. soups, toast.. things easy on the tummy. Eating healthy, whole foods is always the best medicine; it just generally helps boost the immune system. Not food related, and your doctor will know best, ask about taking Arnica. I would recommend Mark Bittman's "How to Cook Everything Vegetarian". He really makes an effort on giving ideas for making it vegan. Even when he doesn't, it is quite easy to use vegan substitutes... non-dairy milks, etc. Plus, it is the most comprehenisve cookbook I have seen in a while. Since he isn't a vegan, he doesn't lean towards suggesting substitutes, with the exception of the occasional tofu mention. Another suggestion is mushrooms. They often can substitute for the meat like texture without being a processed replacement. Hope that helps. If you have never tried it, make Persian Ice Cream or Bastani, made with saffron, rosewater and pistachio. It is unbelievably good. I have a vegan version on my site (http://www.rosewaterandthyme.com/2011/11/persian-saffron-ice-cream/), but you can search and easily find a recipe. Or, make Persian Basmati Rice... it is always served with saffron and when done right, has this amazing crispy crust called Tahdig that is to die for!
