if you're making your own, coconut milk works really really well, better than soy. rice doesn't really work, and rice dream is kinda gross. but there's a product called mimicreme made from cashews that makes -great- ice cream. really really really good.

as for storebought, i'd go for turtle mountain, soy or coconut.

and there's a vegan ice cream cookbook called The Vegan Scoop. I haven't made much from it, but Wheeler's ice cream (the owner of wheelers, which is in boston, is the author) is really really amazing.

i don't really like the taste of maple syrup, but i rarely use syrup for any purpose so it doesn't really matter.

d4kk1tt3n - there was A deal, but not a big deal and there is a lot of question about it. the leading anti-agave spokesman has a very questionable pedigree and the process of making agave syrup he claims is standard is not.

do you trust the weston price foundation?

wikipedia has a different description of the production of agave than given in this article and weston price has an anti-vegetarian reputation. i found a few critiques of the organization but i don't know how reputable the people writing the critiques are either.

it's not that i don't think agave might be overrated. but i'm skeptical of the comparisons to hfcs. i mean, it's high fructose, but it's not necesarily as processed as hfcs (maple syrup and honey are generally processed in some way as well, but of course they are nutritious.).

what i really want to know though is if this is true (from foodrenegade.com):

"Native Mexican peoples do make a sort of sweetener out of the agave plant. It’s called miel de agave, and it’s made by boiling the agave sap for a couple of hours. Think of it as the Mexican version of authentic Canadian maple syrup."

why doesn't anyone make that for public consumption?

that's absurd. chickens lay unfertilzed eggs for the same -reason- we menstruate. what do you think happens to your unfertilized eggs? you menstruate them out with the rest of the contents of your uterus (which for chickens is inside the egg).

that is completely different than fruit where they are carrying seeds that will grow on their own into new plants.

my understanding is that you shouldn't eat the skin of true yams. i'm not sure if that's true, but it's probably worth asking if you are buying them.

i was just reading this list from cracked (out loud to my coworkers) on saturday! there is some crossover.

the fetal egg doesn't seem so strange to me. maybe because i'm a vegetarian, but if you eat ducks, and you eat eggs, what's so strange about eating a half formed duck in an egg?

i'm wondering if the maggot cheese is just an urban legend. it has such an urban legend feel to it. those crazy sardinians! there isn't really anything else we eat that has animals jump up at us from them.

was the fish sperm gross? it totally doesn't sound gross. like the yin or yang to caviar's yin or yang (i'm not sure which is feminine.)

and finally, while i don't see why eating a cockroach is so offensive, beetles -aren't- roaches, so maybe you should add it to you want to try list instead. that said, the ant eggs on the cracked page with the 'consistency of cottage cheese' make my stomach turn on a few levels.

i think i'd rather live in a different neighborhood than have to grow up in that tiny room where my family would also be using the desk under my bed. if they could afford architects, why not just get a bigger place that doesn't need to be tricked out like that?

Cook's Illustrated always advocates using a parchment sling- which I've found to be incredibly useful!
You can make a sling for the pan by laying long, wide strips of parchment paper across the length and width of the pan so that the paper overlaps the edges. Then use the overlap as a handy grip when it’s time to remove the loaf from the pan.

Investing in a silpat or silicone baking mat isn't a bad idea, either. Even just a high end cookie sheet can save you lots of trouble and turn out beautifully/evenly baked treats.

my tap water is fine unfiltered. maybe we should be up in arms about the stuff they are allowed to put in tap water, so we won't need filters at all.

my mom swears tap water is essential in immunizing kids to allergies and stuff as they grow.
