How about BAKING the corn tortilla's? I've done mine by brushing a small amount of a good quality oil on them, cutting them in four's and baking till lightly brown. Same result, a great scoop for fillings, but much lower fat.

Potatoes...sweet or white, have kept people alive and well for centuries! Read the work of Dr. John McDougall, extra brilliant nutrition doc and his take on potatoes :) "The starch solution" his latest, GREAT read. anyway...i keep cooked potatoes in the fridge almost all the time, usually baked in the micro for speed sake.

A FAV vegan breakfast ...~dice a warmed sweet potato, & a small diced apple, half a diced banana or so, a sprinkle of cinnamon, a lil dry oats, and a drizzle of honey. Y.U.M!

In this time of serious economic challenge, beans and potatoes are an inexpensive & satisfying meal as well. RETHINK the potato ...millions have survived the worst of times on them- alone.

I love love love "the kitchen", but often wish for a- how to- convert a recipe that sounds so astounding, to a meatless dish as well. meat/saturated fat free, gluten free...omg!

DIll Pickle...hands down (for me anyway). It's one i wouldnt tire of (i just found my way through a MAJOR paint indecision ordeal) . There's hardly a thing that doesnt look better or complimented by a soft yellow, if it's the right one. This...you can't go wrong with :)

LOVE, love, LOVE every detail lovingly attended to create this home. For all the critical comments about the bars...you've not been there -obviously. I've lived in many a "marginal" neighborhood, and I REFUSE to let that steal my need to create- my own oasis! Should only the most upscale hoods be allowed that pleasure? wow...i'm glad you're not MY friend! They look wonderful, appropriate and I'd feel extremely honored and SAFE, to be a guest in your beautiful home!

Both my husband and I take a $20.00 bill as our spending money, once a week. That's IT. Groceries, other essentials are paid using a credit card that pays you back quarterly. All these tips, plus cooking at home, the Old fashioned way (lots of soups, stews, bean dishes, no meat) reeeeally help. It's a tough world out there, and I'm soooo sorry for all the younger generation that was never taught how to cook, or stretch those dollars. OUCH.
