I've been making my own vanilla extract for years.
I use 4 plump vanilla beans for 250ml vodka and let it sit in a dark corner of my larder. After about two months I start filling some of it into a smaller container and top up the vodka again.Obviously the vanilla extract gets a little less concentrated over the months, but it's still much more flavourful than what is being sold in supermarkets.
I make a new batch about once a year.

After I've learnt that store bought kefir doesn't have the same beneficial effects as homemade ones, I started making my own three months ago. Store bought kefir needs to always taste the same, which isn't the case in a natural setting (considering temperature, light, time ...) and have a much longer shelf live than home made one.
The pros about home made one is that you can play around with the type of milk you use, you have it right when you need it and it's cheaper.
What I like less about it is the rather runny concistency (I like thick and creamy) and fact that it's much more fizzy than the bought one.
Does anybody know how to make my kefir thicker?

I keep collecting recipes of fancy deserts, beautiful cakes etc. But I hardly ever get around to doing them, because, ... who is going to eat that?
So when I have time and my fingers are itching with wanting to make something lovely, I turn to preserving (jams, chutneys etc.).
It's great, since
a. it doesn't need to be eaten within a very limited amlunt of time,
b. it makes great little gifts, and
c. who doesn't like a spoon of strawberry jam in your plain yoghurt, or some rhubarb chutney with your chicken breast?
It helps me and my family to be (reasonably) healthy without sacrificing my need to nurture and to be creative in my off time.

I bought the most beautiful bar cart on ebay; brass & glass 30s design. But now it just sits in our living room since I am too scared to actually fill it. I have two small children.
