Interesting. My favorite brand of polenta is Bob's Red Mill, which labels the product as 'Corn Grits - Polenta.' It's not clear how this differs from the different cornmeal grinds they offer, but corn grits and polenta are considered interchangeable. Polenta Versus Grits: What's the Difference? |

Love my IKEA kitchen.Tons better than the big box cabinets we had before, and comparable to my sister's semi-custom kitchen. I really liked designing it myself, I'm the kind of person who likes bagging her own groceries because I enjoy that level of control. We worked with a contractor friend for the installation which kept us working hard and got the job done in a week, including a new floor and moving a wall. Are IKEA Kitchen Cabinets a Good Idea? I have the 6th edition and the 7th edition. I cherish my copy of the 6th edition. It taught me to cook and I still use it all the time. The 7th edition is ehh. The issue for me isn't the content. It is the more commercial approach to cookbook writing. Instead of recipes written by real women cooking for their families and friends, the recipes are from professional chefs and often read more like formulas. Technically sound, but without the soul of the previous version. The 7th edition also removed whole sections that are still very relevant today, like jams, jellies and preserves. I think that yellow onions are less sharp in flavor than white unless they are sweet onions. I don't usually buy shallots since I do stock red and yellow onions, scallions and dried minced onion. To sub for shallots, I will use less or do the soak in cold water mentioned above. I use onions all the time but my kids, professed onion haters, don't notice because I make sure they are minced small and cooked until soft and translucent. They blend right into a dish this way. Interesting. I haven't had a problem with doubling quick breads or pancakes or other chemically-leavened foods. My pancake recipe is currently quadrupled, actually, to meet the appetites of my growing boys. Maybe the recipe was heavy on baking powder and baking soda in the first place? Make It Double! I think the advice given for cutting up difficult vegetables is good. However, winter squashes like acorn squash, pumpkin and yes, the butternut squash pictured are not root vegetables. Root vegetables grow underground like carrots, potatoes, parsnips, and turnips. Winter squashes grow above the ground on vines and are technically fruits. Since root vegetables and winter squashes are both dry, starchy foods, they can be cooked in similar ways. I like mine oven roasted! Is this more of a problem with wall ovens rather than ovens that are stand-alone stoves? The article seems to refer to double-WALL ovens, but doesn't clarify this point. SYGYZY, try Cook's Illustrated Stovetop Mac and Cheese, it uses eggs to thicken the cheese sauce and is delicious, my favorite. Make the recipe as given for super rich mac and cheese or double the cheese and double the pasta for my favorite version. I like a mix of sharp cheddar and monterey jack. I buy my herbs and spices (and a lot of other products) direct from Frontier Coop Wholesale. It's where most health food stores get their bulk supplies. The quality is fantastic and the prices are amazing. I used to buy Penzey's, but Frontier is just as good IMO when you can control the storage and keep things fresh. Where Do You Buy Your Spices?
