Carbonara -

Boil spaghetti (preferably thin), drain, don't rinse.
1/4 cup parmesan & 1 egg yolk for every 1/4lb of pasta.

Cream and bacon until the proper consistency. (I use the jars of real bacon bits, costco sells them in large pouches. They're also great for omelettes).

What Would You Do With: Cinnamon Baking Chips?

Septicidal, I bought cinnamon chips once upon a time at the stop and shop at the end of the E line. I'd call them before you go all the way out there though.

I have a recipe from an out of print (i think) book titled dessert for chocolate mousse made with just eggs and chocolate chips (its delicious, easy, and sets quickly). I used to sub in some cinnamon chips for something amaaaaaazing. So try subbing them in partially for anything that calls for chocolate chips :) But especially try making a cinnamon chocolate mousse.

My family likes to embed marzipan in sugar cookies, but I'm not a huge fan of it so I couldn't vouch for how good it is. Though I imagine if you like marzipan it can't be bad.

Defrosting, boiling water (eg for tea), and making 'scrambled' egg for a sandwich. That's my favorite trick actually. I spray my pyrex measuring cup with some nonstick spray, pour some scrambled raw egg in and nuke it til its done' Perfect size for a sandwich and very fluffy.

Warming Food and...? How Do You Use Your Microwave?

Got this recipe from a Mission (tortilla company) email. I used normal pre-shredded mexican cheese, whatever tortillas I had on hand, and didn't measure anything, just shredded a cooked chicken breast and then poured in buffalo sauce til it looked right. For variations try mixing in corn or diced onions or peppers.

Buffalo Style Chicken Taquitos

Prep Time: 16 minutes
Cook Time: 14 minutes
Prep Tool: Work Surface, Mixing Bowl, Oven
Serves: 4

Recipe Ingredients:

* 12 Mission® Yellow Corn Tortillas, warm
* 3/4 cup Deli Rotisserie Chicken, white and dark meat (no skin), shredded and reserved warm
* 1/4 cup + 2 tablespoons Buffalo Sauce
* 1 cup + 2 tablespoons Colby Jack Cheese, shredded
* Non-Stick Pan Spray to coat
* 1/4 cup Ranch Dressing or Blue Cheese Dressing
* 2 cups Iceberg Lettuce, hand torn into small pieces

Recipe Instructions:

1. Preheat oven to 400 degrees.
2. Measure out 3/4 cup of the reserved, shredded chicken and place in a separate bowl. Add 1/4 cup + 2 tablespoons Buffalo Sauce to the measured-out chicken and mix together until the chicken is coated.
3. Lay warm tortillas on a work surface and place 1 heaping tablespoon of the chicken mixture horizontally on the bottom of each tortilla. Sprinkle 1 1/2 tablespoons of cheese over each tortilla. Roll tortillas up into cylinders to form taquitos.
4. Spray baking sheet with non-stick pan spray and lay taquitos down, seam side down, on your baking sheet. Once all of the taquitos are on the baking sheet, use your pan spray to coat all of the taquitos.
5. Cook for 13 minutes, flipping over halfway through cooking time.
6. Remove from the oven and serve 3 taquitos to a plate. Place 1/2 cup of iceberg lettuce pieces to one side of the taquitos and spoon 1 tablespoon of ranch dressing alongside the taquitos for dipping. A small amount can be drizzled onto the lettuce if desired.

Hints:

* You could also use blue cheese dressing to dip your taquitos in.
* Instead of using Colby Jack cheese, substitute another cheese of your liking to your taquitos.

She probably won't be able to find turkey or whole chickens (not even cornish) in Japan. We had a fleet of like 10 people scour Tokyo and the best selection we could find was actually at a Costco. We caved and just did chicken breasts.

If you have a toaster oven thats pretty much your only option for baking. We butterflied and stuffed some chicken breasts the year I was in Tokyo, and used the oven in the home ec department at the university we were studying at. We used apple juice to finagle some 'cider'. Mashed potatoes are easy enough. Pie is the hard part, there are a few no bake recipes (would have to go crustless). You can also make like... mousse or something non-bake. Candied sweet potatoes are pretty simple, but I don't recall if the asian ones came out quite the same (just fry thin slices in an excess of butter til black). Rolls are hard. We gave ours and asian theme and for dessert made sushi (slices of mango on sushi rice with coconut milk instead of vinegar with a thin piece of nori to hold it together)

Fess Up! Ever Bought Something "As Seen on TV"?

Honestly? For what I use a toaster oven for (making toast, reheating pizza, making pizza bagels, other such things), I bought a very small $7 toaster oven at Walgreens over 5 years ago, which still works great. If you want to like, bake cookies in your oven its not for you though. No matter what the settings say, they have two - on and off. But it works great.
